Flour-less Strawberry Muffins

INGREDIENTS

  • 2 1/2 Cups Oats (old fashioned)
  • 1 Cup Plain Greek Yogourt
  • 2 Eggs
  • 1/2 Cup of Sugar OR Baking Stevia OR Sweetner
  • 1 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1 1/2 Cups of Sliced Strawberries (fresh and patted dry)
  • 2 Tsp Lemon Juice

 

DIRECTIONS

 

1. Preheat oven to 400 degrees. 

2. Line 12 muffin tins with silicone or foil liners. Avoid using paper liners.

3. Place oats in food processor or blender and blend until consistency of flour. Add remaining ingredients - except for strawberries - into the blender and blend until thoroughly combined.

4. Pour mixture into medium sized bowl and stir in 1 cup of the sliced strawberries.

5. Divide batter among cupcake liners, top with remaining strawberries and bake for 20-25 minutes.

COMMENTS

 

The next time I make these I might try adding some lemon zest to give them a bit more of a lemon punch. They were a little bland but for being flour-less turned out quite well!
